Green ring around

If you’ve ever cut open a hard-boiled egg and noticed a **greenish or grayish ring around the yolk**, there’s usually no reason to panic. The discoloration is not mold or a sign that the egg has spoiled. Instead, it is caused by a harmless chemical reaction that happens when eggs are cooked for too long or are not cooled quickly enough.

The ring forms when **iron in the yolk reacts with sulfur in the egg white**, producing ferrous sulfide. The longer and hotter the egg is cooked, the more noticeable the ring can become. Although the egg is still safe to eat, the yolk may have a slightly stronger sulfur-like taste and a somewhat chalky texture.

The easiest way to avoid the green ring is to pay attention to cooking time. For large eggs, bring them to a boil, then remove them from the heat, cover the pot, and let them sit for about **10–12 minutes**. Once the cooking time is finished, immediately place the eggs in **ice water for 10–15 minutes**. This quickly stops the cooking process and helps keep the yolk bright yellow.

Egg age can also affect how easily they peel, with eggs that are several days old often being easier to work with. However, the green ring itself is not caused by the hen’s diet, artificial coloring, or ordinary spoilage.

So, if you discover a green ring around your egg yolk, it generally means the egg was simply overcooked. A little more attention to timing and rapid cooling can help you get smooth, golden yolks instead.
