My Neighbor Gave Me a Bag of These Strange “Roots”… Do You Know What They Are?

A few days ago, my neighbor gave me a small bag filled with strange, dark objects. They were hard, almost black, and covered with curved points. At first, I thought they were unusual roots or some kind of wild vegetable. “What on earth am I supposed to do with this?” I wondered. After looking into it, I discovered they were actually the fruits of an aquatic plant called *Trapa natans*, commonly known as the water caltrop or horned water chestnut.

The water caltrop grows in freshwater places such as lakes and ponds. Its fruits have a tough shell with several sharp, curved projections. Those unusual “horns” serve a purpose: they help the seed anchor itself in soft mud and sediment so it can survive until conditions allow the plant to grow again. What looks strange to us is actually an important part of the plant’s survival strategy.

Inside the hard shell is a white, starchy kernel, which is the edible part. When properly prepared, it is often described as mildly sweet, earthy, and similar to a chestnut. In some cultures, water caltrops have been eaten traditionally for generations and can also be processed into flour.

Because these fruits come from freshwater environments, they should be cleaned and cooked properly rather than eaten raw. Traditionally, they may be boiled or roasted, then allowed to cool before the hard shell is carefully cracked open. The kernel can be eaten alone, mashed, added to dishes, or turned into flour.

The discovery was a reminder that appearances can be misleading. What looked like mysterious roots turned out to be an unusual edible fruit with a fascinating natural design. Still, wild aquatic foods should never be eaten unless they have been correctly identified and come from a safe, uncontaminated source.
