The Secret Ingredient That Gave Grandma’s Coffee Its Memorable Flavor

Many traditional kitchen habits have faded over time, but some continue to surprise people today. One of the most unusual is an old coffee-making method that uses a whole egg. While it may sound strange at first, this technique was passed down through generations because it served a practical purpose rather than being a novelty.

In the past, coffee was commonly brewed by boiling coarse grounds in a large pot. Although this produced a strong cup, it often left behind bitterness and fine grounds. To improve the flavor and create a cleaner brew, many home cooks would crack a fresh egg into the coffee grounds before brewing. Some recipes used the entire egg, while others also included crushed eggshells.

As the coffee simmered, the egg proteins naturally bonded with tiny coffee particles, causing them to clump together and settle at the bottom of the pot. This made it easier to pour a cleaner cup with fewer floating grounds. Many people who grew up with this method say the coffee tasted smoother and less bitter than expected. The eggshells were also believed to help weigh down the grounds and, in some family recipes, contributed to a clearer cup.
