What You Should Never Cook in a Cast Iron Skillet (and Why)

Cast iron skillets remain a favorite in American kitchens because they are strong, versatile, and can last for generations with proper care. They provide steady heat for foods like bacon, cornbread, and steaks, but they are not ideal for every recipe. Some cooking choices can weaken the seasoning, affect flavors, or cause damage over time.

Acidic foods are one of the biggest concerns. Tomatoes, vinegar, and citrus-based ingredients can slowly wear away the protective layer and react with the metal. A small amount may be harmless, but long cooking times with acidic sauces are better suited for other cookware. As the original article explains, cast iron can leave dishes with “an unpleasant metallic edge” when exposed to these ingredients for too long.

Some delicate and sticky foods can also create problems. Fish may stick and break apart, while sugary sauces can burn and become difficult to remove. Eggs are another challenge because they can attach to the surface when the seasoning is not fully developed.

Cast iron can also hold onto strong flavors. Meals with garlic, spices, or smoky ingredients may leave behind tastes that affect future dishes. Moisture is another threat, as boiling, soaking, or storing food in the pan can damage the seasoning and encourage rust. Sudden temperature changes may also cause cracks or warping.

A cast iron skillet can remain a dependable kitchen tool when handled correctly. Cleaning it gently, drying it fully, adding a light layer of oil, and using it for suitable foods will protect its surface. With care, it continues to deliver excellent cooking results and can remain useful for many years.
