What You Should Never Cook in a Cast Iron Skillet (and Why)

Cast iron skillets are loved for their durability, versatility, and ability to deliver excellent cooking results. With proper care, a good skillet can last for generations. But even strong cookware has limits, and certain foods can damage its seasoning, leave unwanted flavors, or increase the risk of rust. Knowing what to avoid can help keep your skillet in great condition for years.

Highly acidic foods are one of the biggest concerns. Tomatoes, vinegar, citrus, and wine can slowly weaken the protective seasoning and react with exposed metal. Occasional use may be fine in a well-seasoned skillet, but long-simmering acidic sauces are better prepared in stainless steel or enameled cookware.

Delicate and sticky foods can also be difficult. Fish may stick and break apart, while eggs can cling to the surface when seasoning is not well developed. Sugar-rich sauces can burn and leave stubborn residue. Strongly flavored ingredients such as garlic, curry, and smoky spices may also leave aromas behind, so they can affect desserts or other mild foods cooked later.

Moisture is another major enemy. Long boiling, soaking the skillet, or storing leftovers inside it can weaken seasoning and encourage rust. Never put a hot skillet directly under cold water, as sudden temperature changes may even cause cracking.

After cleaning, dry the skillet completely and apply a thin layer of oil. By avoiding harsh conditions and choosing suitable recipes, you can protect the seasoning and keep your cast iron performing well for many years.
